Zingy Caramel & Cinnamon Sweet Potatoes
- Remove the skin of 4 sweet potatoes, and then par boil for 10-15mins (Just as its getting soft.
- Slice into 1 inch discs.
- Mix 1 tbsp brown sugar with 1 pinch of cinnamon, and 1 tbsp melted butter. Spread this mixture onto both sides of your discs.
- Grill for 5mins on each side.
- Serve with a spritz of a lemon/lime wedge and sprinkle on fresh coriander.
